We’re a busy family with working parents and kids who always need feeding. When convenience, cost, and flavor matter, recipes like these stand out. A quick visit to the bakery aisle turned into the inspiration for these bread-bowl dinners.

While browsing the bakery, I found oversized hard rolls that looked perfect for stuffing. I also grabbed a couple of cans of RO*TEL — the tomatoes and chiles gave the filling a bright, zesty flavor. With a handful of pantry staples, this meal came together quickly and was a hit at our table.

Turn your leftover bread into…

Breadcrumbs!

While the filled bread bowls bake, use the reserved inner bread and tops to make homemade breadcrumbs. Toast the pieces in a skillet or the oven, then pulse in a food processor or crush by hand. Fresh breadcrumbs save money and reduce waste.

Ingredients

  • 1 can RO*TEL Original flavor
  • 1 tablespoon olive oil
  • 1/2 medium white onion, coarse chop
  • 1 lb mild Italian sausage
  • 1 (15 oz) can black beans, drained
  • 1–2 tablespoons tomato paste
  • 1/2 cup grated Parmesan cheese
  • 6 large hard rolls
  • Flat-leaf Italian parsley to garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Heat the olive oil in a medium skillet over medium-high heat.
  3. Add the chopped onion and sauté until soft and translucent.
  4. Add the sausage and cook, breaking it up, until browned.
  5. Stir in the RO*TEL and the drained black beans. Add tomato paste to thicken the mixture slightly.
  6. Reduce heat to low and simmer, stirring occasionally, until excess liquid reduces.
  7. Using a serrated knife, carefully cut the tops off the hard rolls. Use a fork to remove the soft interior and create bowls. Reserve the removed bread to make breadcrumbs if desired.
  8. Place the hollowed rolls on a baking sheet.
  9. Fill each roll with the sausage mixture.
  10. Top each filled roll with grated Parmesan cheese.
  11. Bake 8–10 minutes, until cheese is melted and bowls are warmed through. Garnish with parsley if desired and serve immediately.

Notes

If you prefer, substitute the sausage with ground beef, chicken, or turkey.
