Grilling your guacamole ingredients is a total GAME CHANGER!
Don’t put the finished guacamole on the grill — just grill the ingredients that go into it. Avocados, onion, tomatoes, jalapeños and any other vegetables you like develop an amazing smoky depth when lightly charred.
This grilled guacamole works perfectly as a party dip with tortilla chips, a taco or burrito filling, a spread for toast, or a flavorful low-carb side with chicken or steak. It’s simple, impressive, and full of bold, smoky flavor — ideal for entertaining or a weeknight meal.
This awesome party dip tastes like something you’d get at a fancy Mexican restaurant!

HOW TO GRILL AVOCADOS
- Cut avocados in half and remove the pit.
- Brush the flesh lightly with olive oil — don’t overdo it, or the grill may flare up.
- Place flesh-side down on a medium-high grill and cook about 3–5 minutes, until grill marks appear. Grills vary, so check early.
- Remove and let cool before handling.

The smoky char transforms the ingredients: grilled onions bring caramelized sweetness, charred jalapeños add a warm heat, and the avocado picks up a subtle, savory depth you won’t get from raw guacamole. The result is richer, more complex, and remarkably fresh.

Ingredients
- 4 avocados cut in half, pits removed
- olive oil
- 1 small red onion cut in rings for grilling
- 2 roma tomatoes cut in half
- 1 large jalapeño (optional)
- juice of 1 large lime
- 1/2 tsp garlic powder
- 1/4 tsp cumin
- salt and pepper to taste
Instructions
-
Heat an outdoor grill to medium-high and brush the avocado halves and vegetables lightly with olive oil.
-
Grill the avocados flesh-side down for about 3–5 minutes until grill marks appear. Remove and cool.
-
Grill the onions, tomatoes and jalapeño (or grill in a pan) for 2–5 minutes until charred to your liking. Tomatoes cook fastest, so watch them to avoid excess mushiness.
-
When cooled to room temperature, dice the grilled vegetables. Remove seeds from the jalapeño if you prefer milder heat.
-
Scoop the avocado flesh into the bowl with the vegetables and mash gently with a fork for your preferred texture.
-
Stir in lime juice, garlic powder, cumin, and salt and pepper to taste. Adjust seasonings and serve.
Notes
- Everyone likes their guacamole a bit differently. Taste and adjust seasoning as you go.
- Cilantro is a great addition if you enjoy it; serve it on the side for guests who don’t.
