The exact origin of this dish is debated—some trace it to Hong Kong, others to Taiwan or even New York—but regardless of its history, the result is the same: a savory, satisfying noodle bowl that’s loved at my table.

How to Make Cold Sesame Noodles

  1. Whisk together all sesame sauce ingredients in a bowl until smooth and set aside.
  2. Cook the noodles in boiling water following the package instructions. Drain in a colander and rinse under cold water until the noodles are cooled through.
  3. Toss the cooled noodles with a little sesame oil to keep them from sticking and to add flavor.
  4. Serve the noodles in shallow bowls, spoon on the sesame-peanut dressing to taste, and top with cucumber, cilantro, scallions, chopped peanuts, and a drizzle of chili oil.

Ingredients

Sesame Sauce

  • 2½ tablespoons peanut butter, smooth
  • 2½ tablespoons reduced sodium soy sauce
  • 2 tablespoons 100% pure sesame paste
  • 2 tablespoons sesame oil
  • 1½ tablespoons Chinkiang vinegar or Chinese black vinegar
  • 1 tablespoon sugar
  • ½ tablespoon avocado oil
  • ½ teaspoon fresh grated ginger
  • 1 large garlic clove, grated
  • 3½ tablespoons warm water

Noodles

  • 7 ounces fresh wheat noodles or spaghetti

Garnish

  • ½ cup cucumber, thinly sliced
  • ⅓ cup cilantro, roughly chopped
  • ¼ cup scallions, chopped
  • chili oil, to finish
  • 3 tablespoons roasted salted peanuts, roughly chopped

Instructions

  • Bring a pot of water to a boil.
  • Whisk all sesame sauce ingredients together in a bowl and set aside.
  • Cook the noodles in the boiling water according to package instructions.
  • When cooked, drain the noodles and rinse under cold water until cooled through.
  • Toss the cooled noodles with a little sesame oil to prevent sticking and set aside.
  • Plate the noodles, add sesame dressing to taste, and finish with cucumber, cilantro, scallions, chopped peanuts, and chili oil.
