
Baked Plantains with Bacon and Cheese (Platanos Asados con Tocineta y Queso)

Ingredients
- 4 ripe plantains whole
- 2 tablespoons melted butter
- 4 thick slices of queso blanco or mozzarella
- 4 bacon strips
- Chimichurri or cilantro pesto to serve
Instructions

Preheat the oven to 400°F (200°C). Trim the ends of the plantains and peel them carefully.

Place the whole peeled plantains in a baking dish and brush them with melted butter. Bake for 30 to 40 minutes, until they are soft and caramelized.

Remove from the oven and slice each plantain lengthwise, taking care not to cut all the way through. Stuff each one with a slice of cheese and wrap with a strip of bacon.

Return the stuffed plantains to the oven and bake for an additional 10 minutes, or until the cheese has melted and the bacon is cooked through. Serve warm with chimichurri or cilantro pesto.
