Like all of my weekly meal plans, this free plan includes seven satisfying dinners plus breakfast, lunch, and snack ideas, meal-prep suggestions, and a shopping list to simplify your week. The goal is to make home-cooked meals easier and more enjoyable for busy families.

Dinner Recipes

  • Sunday: Slow Cooker Steak Fajitas or Instant Pot Steak Fajitas
  • Monday: Instant Pot Mac and Cheese or One Pot Mac and Cheese with a side salad
  • Tuesday: Crockpot BBQ Chicken Legs served with leftover mac and cheese
  • Wednesday: Jerk Chicken Kabobs with Cilantro Lime Rice
  • Thursday: Caribbean Chicken Salad
  • Friday: Salmon Bites with leftover cilantro lime rice
  • Saturday: Pita Bread Pizzas with a side salad

Breakfast Ideas

  • Whole wheat waffles (no added sugar)
  • French toast
  • Instant Pot egg bites

Lunch Ideas

  • Bean burritos
  • Chickpea avocado salad sandwich

  • Homemade Drumsticks-style ice cream cones

Tips for this Week’s Meal Plan

  • Make extra mac and cheese on Monday to serve with the BBQ chicken on Tuesday.
  • Use romaine for side salads since it’s also used in the Caribbean chicken salad; add extra produce from the week like peppers or tomatoes.
  • Cook extra rice on Wednesday to use with the salmon on Friday.
  • If you don’t have an Instant Pot, cook 2 cups of rice on the stove according to the box directions. Finish with the zest and juice of one large lime and 1/4–1/2 cup chopped cilantro, plus salt to taste.
  • Serve fajitas with tortilla chips if you like, and save some chips to add crunch to the Caribbean salad.
