Pork and Broth
Ingredients
- Marinated pork (prepared earlier)
- Gluten-free non-stick cooking spray
- 2 tablespoons vegetable oil
- 4 cups chicken broth
- 2 cups water
- ¼ cup mirin
- 1 teaspoon dashi powder
- ¼ cup Marukan Organic Rice Vinegar
- ½ cup tamari
- 1 tablespoon fish sauce

- 4 baby bok choy, halved lengthwise and sautéed

- Remove pork from the marinade and discard the marinade. Spray the Instant Pot insert with cooking spray and set to sauté. Add oil and brown the pork on all sides.
- Add chicken broth, water, mirin, and dashi powder. Cook on high pressure for 45 minutes, then allow a natural release. Remove the pork and shred with two forks.
- Stir vinegar, tamari, fish sauce, chili garlic sauce, and pepper into the broth. Set the Instant Pot to sauté and simmer for 5 minutes to blend flavors.
- Cook the ramen noodles according to package directions.
- Divide noodles into four bowls, ladle broth over them, top with shredded pork, and garnish with pickled eggs (halved), pickled vegetables, pickled mushrooms, sautéed bok choy, chili oil, green onions, and sesame seeds.
