I’ve been watching my diet lately, and one thing that has helped me stay on track while still enjoying some satisfying carbs is Minute Ready to Serve Organics rice. These single-serve cups offer a wholesome option and just the right portion size. I’ve used them both as a side and as the base for meals, and recently I made a quick and tasty Taco Rice Bowl that’s become a lunchtime favorite.

These cups are perfect for a quick lunch. I usually brown and season a batch of taco meat earlier in the week, then when it’s time for lunch I microwave a rice cup for one minute and assemble my bowl. I layer the warmed rice with taco meat, black beans, diced tomato, shredded Mexican-style cheese, and finish with a drizzle of light Catalina dressing. It’s fast, filling, and portable — ideal for busy days when I’m juggling kids’ activities or deep in work.

Taco Rice Bowls

Ingredients

  • 1 Pound Ground Beef
  • 1 Package Taco Seasoning
  • 4 Minute Ready to Serve Organic Red Quinoa and Brown Rice with Garlic
  • 1 Cup Black Beans
  • Sliced Tomato
  • Shredded Mexican Style Cheese
  • Light Catalina Dressing

Instructions

  • Brown the ground beef in a medium skillet over medium-high heat.
  • Drain, return to the skillet, and add the taco seasoning following package directions.
  • Warm the rice cups according to the package instructions.
  • Place rice in bowls and top with seasoned ground beef, black beans, sliced tomato, and shredded cheese. Drizzle with light Catalina dressing.
  • Serve immediately.
