Hello Spicy Sobrasada Burger!
This burger combines minced pork with spicy Majorcan sobrasada, a spreadable cured pork paste similar to salami. It creates a juicy, flavour-packed burger with a smoky, paprika heat.

Mmm—this sobrasada burger is already shaping up to be my go-to BBQ recipe this year. It’s juicy, fiery and packed with flavour. Sobrasada blends pork mince with bold spices and smoked paprika. There are milder varieties, but the spicy version I used delivers a real kick.
In Majorca you’ll find it sold in sausage form. I’ve seen pre-packaged versions in some UK supermarkets before. If you’re curious, I once used it for a sobrasada and goat cheese tart, though availability can vary.
City Break: Palma, Majorca

Valparaiso Palace Hotel and Spa
The Valparaiso is a relaxed, luxurious 5-star hotel with sweeping views over Palma and the bay. Evenings on the balcony are magical as cruise ships light up in the harbour. With multiple pools, a large spa and excellent restaurants, it’s easy to spend most of your stay relaxing on-site.

Mercat de L’Olivar
Hunting down the local food market is one of my favourite things to do in a new city. Mercat de L’Olivar is a standout — full of fresh produce, cured meats, cheeses, baked goods and a fish market with a champagne and oyster bar. If you want authentic sobrasada, visit Mateu Fiol; they stock a wide range of charcuterie and the whole sobrasada sausage was around €11. As a cured meat it doesn’t need refrigeration, so it’s easy to pack in luggage.



Fornet de la Soca
This bakery served some of the trip’s best bites. Their lamb and sobrasada empanadas were superb, but the showstopper was the ensaimada — a light, airy pastry made with lard instead of butter. It’s delicate, slightly caramelised on the bottom and unlike anything heavy or stodgy. If you visit Palma, try to hunt one down.

Rialto Living
Rialto Living combines a café and a beautiful shop filled with European home and kitchenware. It’s a lovely place for inspiration, whether you’re after food props or enjoying the restored architecture.

Other highlights included the Nakar Hotel rooftop bar with a DJ, infinity pool and spectacular views, and the Summum Hotel’s Equus restaurant, where the chef adapted dishes for guests with food intolerances and even created a dairy-free dessert for the group.
Spicy Sobrasada Burger
Now for the recipe you came for. Pork burgers can sometimes be dry or bland, but combining pork mince with spicy sobrasada changes everything. The paste keeps the patty moist and adds intense flavour, so these burgers are far from ordinary.

If you can’t find sobrasada, try N’duja or, in a pinch, finely diced hot chorizo (check labels for dairy if needed).
Sobrasada Burger — Ingredients (serves 2)
- 200 g pork mince
- 75 g sobrasada
- Salt and pepper, to taste
- Burger buns, lettuce, tomato and mayonnaise, to serve
Instructions
- Place the pork mince in a large bowl.
- Break the sobrasada into small pieces and scatter over the pork.
- Using the tips of your fingers, gently mix until the sobrasada is evenly distributed. Handle the meat gently to keep the burger juicy — avoid squashing.
- Divide the mixture into two portions and gently shape each into a patty without compacting the meat too much.
- Preheat a BBQ, griddle or frying pan. Cook the patties for 4–5 minutes on the first side until a golden crust forms and the meat releases from the surface.
- Season the top with salt and pepper, flip, and season the other side.
- Continue cooking until cooked through — internal temperature should exceed 63°C if using a thermometer.
- Serve in a bun with lettuce, thick slices of tomato and mayonnaise. Enjoy!
