Ingredients

  • 1 1/2 cups whole wheat pastry flour
  • 1 cup oat flour
  • 1/4 cup ground flax seed
  • 1 1/4 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 1/2 teaspoons vanilla extract
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup coconut oil
  • 1/2 cup brown sugar
  • 1 apple, finely chopped (about 1 3/4 cups)

For the Streusel Topping:

  • 4 tablespoons oats
  • 2 tablespoons whole wheat flour
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons coconut oil

For the Icing:

  • 2 tablespoons coconut butter
  • 1 tablespoon milk

Instructions

  • Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  • In a large bowl, whisk together the dry ingredients: whole wheat pastry flour, oat flour, ground flax seed, baking soda, cinnamon, salt, and nutmeg.
  • In a separate bowl, whisk the wet ingredients: vanilla, eggs, milk, coconut oil, and brown sugar.
  • Pour the wet mixture into the dry ingredients and stir until mostly combined.
  • Fold in the finely chopped apple until evenly distributed.
  • Pour the batter into the prepared loaf pan.
  • Make the streusel by combining oats, whole wheat flour, brown sugar, cinnamon, and coconut oil in a small bowl; use your fingers to rub the mixture into a crumbly texture.
  • Sprinkle the streusel evenly over the batter and bake for about 40 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove the bread from the oven and let it cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
  • For the icing, warm the coconut butter and milk together briefly (about 15 seconds) and stir until smooth. Drizzle over the cooled bread.
