Ingredients

  • 4 avocados cut in half, pits removed
  • olive oil
  • 1 small red onion cut in rings for grilling
  • 2 roma tomatoes cut in half
  • 1 large jalapeño (optional)
  • juice of 1 large lime
  • 1/2 tsp garlic powder
  • 1/4 tsp cumin
  • salt and pepper to taste

Instructions

  • Heat an outdoor grill to medium-high and brush the avocado halves and vegetables lightly with olive oil.
  • Grill the avocados flesh-side down for about 3–5 minutes until grill marks appear. Remove and cool.
  • Grill the onions, tomatoes and jalapeño (or grill in a pan) for 2–5 minutes until charred to your liking. Tomatoes cook fastest, so watch them to avoid excess mushiness.
  • When cooled to room temperature, dice the grilled vegetables. Remove seeds from the jalapeño if you prefer milder heat.
  • Scoop the avocado flesh into the bowl with the vegetables and mash gently with a fork for your preferred texture.
  • Stir in lime juice, garlic powder, cumin, and salt and pepper to taste. Adjust seasonings and serve.

Notes

  • Everyone likes their guacamole a bit differently. Taste and adjust seasoning as you go.
  • Cilantro is a great addition if you enjoy it; serve it on the side for guests who don’t.
