This One-Pan Sausage Gnocchi and Veggies is a quick, satisfying meal that’s perfect for busy weeknights. It’s prepared in a single pan and packed with adaptable vegetables.

ONE-PAN SAUSAGE AND VEGGIES
Gnocchi gets a delightful texture when pan-fried instead of boiled: golden and crisp on the outside, tender inside. This one-pan dish combines seared gnocchi with savory sausage and seasonal vegetables for a balanced, flavorful meal.
The recipe is very flexible — use the vegetables you have on hand. I chose seasonal options, but bell peppers, zucchini, corn, or yellow squash all work well.

INGREDIENTS
- Andouille sausage – A spicy, smoked option that adds bold flavor. Substitute kielbasa or any smoked sausage for a milder result. You can also use chicken, turkey, or beef sausage.
- Bell peppers – Red, orange, or yellow peppers are best for roasting. Green peppers can become bitter when roasted a long time.
- Zucchini – Slice into half moons. Yellow squash is a fine substitute.
- Fresh corn – Adds a touch of sweetness. Cut from the cob and sauté or use pre-cooked corn.
- Olive oil – For cooking and crisping the gnocchi.
- Potato gnocchi – Typically found near pasta; some brands are gluten-free, so check labels if needed.
- Parmesan cheese – Grated and sprinkled on top for finishing flavor.
HOW TO COOK CORN ON THE COB
There are several quick ways to cook corn on the cob; choose the method that works best for you.
- Boil: Bring a pot of water to a boil and cook ears of corn for 3–5 minutes.
- Grill: Place corn on a medium-high grill and cook 3–5 minutes, turning occasionally for char and flavor.
- Microwave: Keep the corn in its husk (or wrap in a damp paper towel) and microwave 3–5 minutes; the corn steams in its husk.

Ingredients
- 1 tablespoon olive oil
- 1 lb andouille sausage, sliced into 1/4 inch slices
- 1 lb potato gnocchi
- 2 medium zucchini, sliced into half moons
- 3 ears corn, cooked and sliced off the cob (see notes on how to cook corn)
- 1 red bell pepper, sliced into 1 inch strips
- grated Parmesan
- basil for garnish
Instructions

Heat the olive oil in a large skillet over medium-high heat. Add the sliced sausage and the gnocchi. Let them cook undisturbed for 3–4 minutes to develop a golden crust, then flip and cook a few more minutes until the sausage is browned. Remove the sausage and gnocchi with a slotted spoon to a plate, leaving about 1 tablespoon of oil in the pan.

Add the zucchini to the pan and cook over medium-high heat for 2–3 minutes. Season lightly with salt; keep in mind the sausage will add saltiness.

When the zucchini has started to soften, add the corn kernels and bell pepper. Cook another 2–3 minutes until the vegetables are tender-crisp. Return the sausage and gnocchi to the pan to heat through. Finish with grated Parmesan and garnish with fresh basil before serving.
