
I didn’t grow up using a slow cooker. Our family meals usually came from the oven, or my sisters and I had to rustle something up ourselves. Pot roast was a Sunday staple after church, slowly roasting in the oven for hours.
Looking back, that felt a little risky—leaving food unattended for so long.
Years later, when I registered for wedding gifts, I finally added a slow cooker to my kitchen arsenal. I actually received three, returned the extras, and kept the one that fit my needs. I was thrilled to finally own one.

Slow cookers have improved over the years—like tech devices getting steady updates. Lately I’ve been cooking a variety of dishes in a Hamilton Beach Set ‘n Forget® 6 Qt. Programmable Slow Cooker. One handy feature is the temperature probe that lets you monitor meat doneness without worrying about overcooking. It makes life easier, and yes, I find myself doing more online kitchen shopping.
Another tip: use slow cooker liner bags. When the meal’s done, lift out the bag and toss it—cleanup becomes nearly effortless.

Slow cooker chicken enchilada soup

Ingredients
- 1 cup diced white onion
- 15 ounce can ranch style black beans
- 14.5 ounce can fire roasted diced tomatoes
- 10 ounce can mild green chile enchilada sauce
- 1/2 teaspoon minced garlic
- 1/4 teaspoon ground cumin
- 1/4 teaspoon chili powder
- Juice from 1/2 lime
- 2 pound rotisserie chicken, skin removed and shredded
- 16 ounces chicken stock
- 4 ounces water
- 1/4 cup light sour cream
- 1 1/2 cups shredded Mexican cheese
Instructions
Set the slow cooker to High for 3 hours. Add all ingredients except the cheese and stir to combine. During the final 20 minutes of cooking, stir in the shredded cheese so it melts into the soup.
Serve garnished with additional sour cream, extra cheese and a lime wedge if desired.
